Ashford Castle, County Mayo

Ashford Castle is a 13th-century Norman fortress on the southern shore of Lough Corrib in County Mayo, Ireland, today operating as one of the island's premier luxury hotels. First fortified around 1228, it passed through successive Anglo-Irish noble families before the Guinness dynasty acquired it in 1852 and spent decades transforming it into a grand country retreat, adding Victorian towers and formal gardens that blend into the surrounding oak woodland. The battlements and grey-stone turrets reflected in the lake's calm surface sit at the western edge of Connemara, a landscape of bog, forest, and open water that shapes the hotel's activity programme. Guests can take part in the castle's falconry school — one of Ireland's oldest active falconry traditions — as well as salmon fishing on Lough Corrib, horseback riding through the estate grounds, and kayaking along the lake's reed-fringed shores.
